Dragon Fruit Ice Cream

So if you have an ice cream maker then follow directions as posted. If you do not have an ice cream maker then pour mixture into a glass baking dish or metal baking sheet then place in freezer to form a granita. When set remove from freezer and scrape to serve.


Servings: 2-3
Prep Time: 5 Minutes
Cook Time: 20 Minutes
Ingredients:
Process:
  1. Cut your dragon fruit in half, use a spoon and remove all the fruit
  2. Combine your coconut milk, egg yolks, vanilla, and sea salt in a sauce pan over medium heat
  3. Bring to a mild boil constantly whisking
  4. Remove from heat and let cool
  5. Place your dragon fruit in a food processor and process down
  6. Add your dragon fruit to your cooled coconut milk mixture
  7. Once mixed, place in your refrigerator to cool, for at least 2 hours but you can leave it over night
  8. Remove from the fridge and immediately use in your ice cream maker after you mix it slightly to ensure nothing settled
  9. Enjoy once it is done.  This ice cream will not turn into a brick like most coconut milk ice cream
  10. Live on the edge a little and serve in the shell of the fruit
  11. Enjoy
